“Ihr Pharisaer”: the story behind the glass cup
Back in 1872, in Germany, the royalty was an open buyer of alcohol, coffee, and other beverages.

Gustav Beyer, a well-known pastor, was a public figure that recriminated the consume of liqueur because, according to his word, it woke up the demons inside the human soul. Because of that, people started to hide their guilty pleasure by mixing the strong flavor of alcohol with other dense ingredients while they were in front of him.

One day, Beyer was the host of a popular baptism. Because alcoholic beverages were not allowed at religious events, an anonymous drinker mixed his rum glass with fresh coffee and whipped cream. However, Beyer noted the aroma and demanded to taste the drink. His words? “Ihr Pharisaer!” (oh, you, Pharisees!)

After that, this beverage wins popularity around the country until it was named a traditional beverage.

Prepare the Kaiser for German coffee!
It's not hard to prepare a Der Pharisaer, the only things you'll need is dark rum (as you like it, to Germans, there is never enough liqueur!), one strong coffee cup, half cup of whipped cream and sugar.

First, choose a large, extended cup, where the cream doesn't collapse. Add the coffee and the sugar (if it's necessary), then add the rum.  Mix it well and put the creamy touch until reaches the edge of the cup.

Nitro brew coffee: A frothy delight
Nitrogen is a chemical amply used by food industry to refrigerate prepared meals while it's transported or stored. Liquid nitrogen is also used to cook at low temperatures! Believe it or not, the dehydrating properties of cold produce the same cooking process as heat. That's why some people use this chemical to brewing.

When the liquid nitrogen comes into contacts with another liquid like water or coffee, the presence of oxygen makes the liquid nitrogen more difficult to dissolve. Compared to the traditional brewing method, the nitro brewed coffee is smoother. Its tastiness is lighter, but it can be mixed with other ingredients to boost the drink.

Cold versions of coffee?
The difference between nitro brew coffee and the cold-brewed one is that the first is more bubbly and creamy. So, if you're lactose intolerant, you can order a cold milkshake with nitro brew coffee: It tastes the same without milk! If you leave the ground coffee for another time, even for the same day, it will lose almost all its properties. The smell and taste of your beverage depend on the quality of the beans and their preparation before putting it in the espresso machine.

Grinding 101
There are many ways to do it depending on the taste you want to give to your drink. For example, if you’re going to make Turkish coffee, you have to grind your beans until you have a polished flour. If you want a thicker beverage like carajillo or double espresso, ground coffee should be more rustic or "coarse."

Also, to grind your coffee, you'll need the right tools. You can choose between two types of a grinder, depending on your needs:

  • Blade Grinders are perfect for those who want to make several kinds of coffee without having to buy more than one grinder. They use metal blades that grind the beans. Due to them, you can obtain a thicker or a whole ground coffee, depending on how long you leave it on the machine. Using a blade grinder implies putting the beans on the plastic surface and start the machine for a few seconds in short burst so the coffee doesn't overheat.

  • On the other hand, Blur grinders use a flat surface that crushes the grains to dust. They are usually much neater than blade grinders, although their price is higher. To grind coffee using a blur grinder, just put your beans on the surface and start the machine. It will be powdered in a few seconds without your supervision!

  • The first thing baristas recommend for those who like to prepare its coffee at home is grind only the amount you are going to drink at the moment.
  • If possible, roast your coffee at the moment you're preparing your drink. If you don't have a machine, some roasters pack the coffee well before it is sold.
  • Chill it! Preserve your roasted coffee beans in a cold, dry place like your fridge. That way, your coffee will always be fresh.
  • The problem of aroma loss is caused mainly by oxidation. There are many hermetic boats specially designed for this purpose on the market.
  • When the coffee pot is full, there is very little air that can oxidize the coffee pot. However, when the boat is half-way, the air/coffee ratio causes more oxidation reactions. Put a transparent cooking film on the surface of the coffee and glued to the interior walls of the pot.

All You Need to Know about Peaberry Coffee

The perks of being a peaberry bean
The peaberries are the result of a genetical change in arabica coffee beans. When the coffee plant is flowering, each cherry usually contains two seeds (grains) in its interior. Each of these grains occupies a half of the sphere that forms the cherry inside. Hence they have a more curved part, almost flat. However, peaberry bean contains only one seed. They are more rounded and fat, like two seeds in one.

When it's flowering, Peaberries plants receive more rain and sunshine than the rest of the coffee flower plantation. Their growth is lower while the concentration of acids higher. This makes the resulting cup with a stronger flavor and an intense aroma.

Earlier, coffee farmers discarded these seeds. Today they're used to create a product, unlike conventional coffee. The roasting process is slightly different from the regular one. Peaberries can roll through the machine and are more sensitive inside, that's why the roasting is brief using lower temperatures.

The final package must not contain another type of berry because it could contaminate their natural properties. Also, its consumption requires a more fine grinding. However, the drink preparation it's the same as the average beans.

You can prepare your regular beverage, but also its possible to find cold brewing peaberries drinks, with or without liqueur. That means you can enjoy a delicious frappe with peaberry beans while you're in summer days or an exquisite espresso at the office. You can choose how to prepare it, like regular coffee.

Coffee’s DNA: A new way to establish coffee range
In 2011, the Spanish Company AZTI Tecnalia developed a new method to spoil coffee adulteration based on molecular biology. They analyzed coffee's DNA to determine the purity of Arabica coffee as a result of the mix with less quality coffee beans before brewing process.
This coffee test can detect the presence of Robusta coffee, Chicory or Roasted Malt in Arabica coffee. By separating the coffee genome, they can distinguish between the sorts of coffee by its quality. In fact, this test can also calculate the percentage of good coffee and its substitutes in one sample.
Spoiling coffee's quality using your senses
Although this test represents a significant advantage on coffee science, most of coffee farmers and roasters prefer more traditional methods. Leaving the molecular biology behind, they evaluate their products using their experience, along with their senses.

  • The coffee smell must be sweet, with a little touch of herbal essences.  
  • The acidity of the espresso depends on the harvest and the type of coffee bean. Tasting coffee may determinate how much bitterness is contained in Arabica coffee by its humidity.
  • Also, the bitterness intensity depends on the roasting process. A coffee purely acid doesn't have a good flavor.

Besides purity of coffee beans, many factors influence coffee’s quality. In the coffee industry, it's important to pay attention to the substantial changes that damage coffee once it goes to market:

  • The way coffee is packed may affect the product: roasted coffee absorbs humidity in the air. Also, the sun light subtracts the coffee oils.  
  • If your coffee doesn't have its unique smell, it means that it has passed too much time between the roasting process and the consumption.
  • Your coffee tastes burned when the roasting process burned the beans, or when you put it too much time in the espresso machine.

Coffee and Liqueur: How to Mix Them?

Combine them and make the new favorite drink at parties!
Coffee is a great beverage for those lazy mornings but also can be a marvelous companion in your party nights with friends. Due to its flavor and utility, coffee can be combined with many ingredients to make a new experience.

Alcohol is one of the best matches for coffee. In cuisine history, the first results mixing these two were very successful. Nowadays, the geniusly improvisations of baristas are developing new combinations that are served in most of bars and coffee shops around the world.

Although cold brew coffee is used mostly in cocktails with caffeine, you can prepare a lot of recipes using your regular espresso. That's why today at Coffland Corp, we will teach you how to make the perfect adult drink beside the classic White Russian or Espresso Martini.

B-50
B-50 is one of the most famous coffee cocktails. There are two ways to prepare it: using a cocktail machine or manually, with the "building process."

Add Kahlúa in a glass cup. Then, put Bailey Irish cream taking care of not mixing it with the other drink. Finish it with Orange-flavored liqueur using a cocktail spoon. Your B-50 will look like three layers drink with a lovely color definition.

Mrs. Brown
Making Mrs. Brown doesn't require a shaker: Add right to your cup some ice, 1 1/2 oz of triple sec or rum, black tea, lemon juice and espresso as you like it. For a more condensed flavor, put 3/4 oz of jelly syrup.

Urabá
This beverage combines the tropical banana flavor, dry rum and, of course, your favorite drink.

To make Urabá, you'll need a cup of ristretto, 1 oz of banana liqueur, 1 oz of white rum and banana syrup. Put all ingredients in your mixer and served it brewing it with your mixologist shaker.

Frappé
A frappé is a refreshing and strong drink for those with trained palates. Mix 2 oz of whiskey, 2 oz of amaretto, 1/2 oz of jelly syrup, 1 oz of lemon juice in your shaker. Then, put the amount of Ristretto you want to serve. You can serve the final result in a glass with ice.

Tiramisú
Put in the mixer 1 oz of pisco grape, 2 oz of coconut cream, 3 oz of evaporated milk and espresso as you like it. The mix will taste like a sweet piece of heaven. If you want to decorate your drink, put a few coffee beans and nutmeg in your cup. Don't forget to add some ice.
